This is me using my Thermapen ONE to check the temperatures while grilling some pork chops on my Recteq RT-B380 “Bullseye” with GrillGrates. I seared both sides at the highest heat my Bullseye could make (749 deg F) and then reduced heat and set the chops off to the side to finish them. They were delicious.

I seared both sides at the highest heat my Bullseye could make (749 deg F) and then reduced heat and set the chops off to the side to finish them. They were delicious.
